Scallion-Burst Lamb (Shandong Style)

Lamb sliced two millimetres thin, burst for twenty seconds in a smoking-hot wok with scallion and a sweet bean-paste sauce, served with a warmed flatbread — Shandong's fastest lamb dish. Adapted for a home kitchen from the original ClouChef R&D report — 葱爆羊肉鲁菜, report 98.

Why this works

This is a twenty-second dish, and everything before the wok is about making those seconds count. The lamb is sliced from frozen at 0.2 cm, so thin it cooks through in ten seconds; any thicker and it is either raw inside or overcooked by the time the scallion is done. The pan must be smoking — above 200 °C — before the oil goes in, because a cooler pan turns the burst into a braise: the meat weeps water, the sauce thins, and the scallion goes limp. The sauce is premixed from sweet bean paste, soy, vinegar, sugar, salt, MSG and cooking wine, so nothing is measured while the wok is screaming hot. Scallion goes in only after the lamb has changed colour, so it cooks just to crisp-tender in the remaining eight to ten seconds, and the whole pan leaves the heat the instant the sauce coats the slices.

Equipment

Steps

  1. Slice and premix. Slice the frozen lamb hind leg 0.2 cm thick, keeping the slices even. Cut the scallion into 3 cm diagonal segments. Mix the sweet bean paste, soy sauce, vinegar, sugar, salt, MSG and cooking wine into a sauce; it may be premixed and refrigerated up to 24 hours.
  2. Heat the wok until smoking. Heat the wok until it smokes, above 200 °C, then add the oil and swirl to coat. The pan must be this hot before anything goes in — a cooler pan makes the lamb stew instead of burst.

  4. Burst the lamb. Add the lamb slices and stir-fry on high heat for 10 seconds until changed colour, about 70% cooked.
  5. Add scallion and sauce, and finish. Add the scallion segments and the premixed sauce and keep stir-frying on high heat for 8–10 seconds, until the scallion is just cooked but still crisp and the sauce coats the lamb evenly. The lamb centre must reach at least 70 °C / 158 °F — check with a thermometer if unsure, and return to the heat if it falls short. Total burst time must not exceed 20 seconds. Serve at once in a pre-warmed plate with the warmed flatbread, whose centre must reach at least 75 °C / 167 °F.

Technique: smoking pan, twenty seconds, no more

The failure mode is always time: every second past twenty dries the lamb, wilts the scallion and darkens the sauce toward bitter. That is why the sauce is premixed, the scallion is cut before the wok heats, and the plate is warmed in advance — there is no pause available mid-burst to do any of it. If the lamb weeps liquid, the pan was not hot enough; if the sauce tastes burnt, the bean paste went in before the lamb had coloured, or the burst ran long.

Variations

Frequently asked questions

Why slice from frozen?

Because 0.2 cm slices are nearly impossible to cut from thawed meat, and even slices are what let the lamb cook in ten seconds.

My pan never gets hot enough — what then?

Use a cast-iron skillet on the highest heat and cook half the lamb at a time; crowding the pan cools it (adaptation).

Why premix the sauce?

Because twenty seconds leaves no time to measure anything, and bean paste added late clumps instead of coating.

Storage and freezing

Best eaten within minutes of the wok; the scallion wilts fast. Leftovers keep 1 day refrigerated; reheat in a very hot pan for seconds until steaming hot, accepting a softer texture. Do not freeze.
