Firm tofu pan-fried golden, then braised five minutes with savoury minced pork, mushrooms and crisp water chestnut dice — a Minnan home-style dish built on texture contrast. Adapted for a home kitchen from the original ClouChef R&D report — 闽南肉末豆腐, report 119.

The dish's pleasure is a contrast that has to be protected at every step: soft tofu against crisp water chestnut, and the report guards the crunch by blanching the chestnut dice just thirty seconds — long enough to make them safe, short enough to keep them crisp — and adding them to the braise only with the tofu, so they never cook longer than five minutes. The tofu itself is cut two centimetres square and a centimetre thick, patted dry, and fried at about 160 °C for two to three minutes a side: dry surfaces brown, wet surfaces steam and stick. The pork is fried separately until fully changed colour and rendering its fat, about two minutes, with the mushroom dice fried a minute more for aroma, before water, soy, wine, sugar and salt join and the whole pan braises on medium-low heat. A final high-heat reduction of one to two minutes thickens the sauce to a clinging coat, and the scallion goes in for ten seconds only — heated through, still fragrant.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Firm old tofu | 7 oz | 200 g | Cut into 2 × 2 × 1 cm blocks, patted dry. |
| Minced pork, 30% fat | 2.8 oz | 80 g | — |
| Dried shiitake, soaked | 1 oz soaked | 30 g soaked | Soaked 30 minutes in warm water, diced. |
| Water chestnuts, peeled | 1.8 oz | 50 g | Diced 0.5 cm; fresh, frozen or canned (adaptation). |
| Scallion | 0.35 oz | 10 g | Cut into scallion flowers. |
| Ginger, minced | 0.2 oz | 5 g | — |
| Light soy sauce | 1 tbsp | 15 ml | — |
| Cooking wine | 2 tsp | 10 ml | — |
| Sugar | ½ tsp | 3 g | — |
| Salt | ¼ tsp | 2 g | — |
| Water, for braising | About ¾ cup | 200 ml | — |
| Neutral oil | 2 tbsp | 30 ml | 15 ml for the tofu, 15 ml for the pork. |
Three small disciplines carry this dish: dry tofu surfaces, because wet tofu steams instead of browning and sticks to the pan; a thirty-second blanch for the chestnuts, because they are the dish's crunch and any longer in boiling water softens them; and a ten-second scallion finish, because scallion cooked longer loses its fragrance and turns dull. If the sauce looks watery at the end, it needed the full high-heat reduction — the braise liquid is deliberately generous so the tofu can absorb it, and the reduction is what turns the remainder into a coat.
To kill surface bacteria and parasites while keeping their crunch — thirty seconds is the report's balance point.
Usually the surface was wet, or the pan was not hot enough before the tofu went in. Pat dry and heat to about 160 °C first.
No — it falls apart in the braise. Firm old tofu is essential here.
Best eaten fresh. Leftovers keep 1 day refrigerated; reheat gently until steaming hot throughout. Do not freeze.
