Tofu fermented until it grows a coat of white mould, pan-fried to a tiger-skin crust, then tossed with preserved egg, ham and peas and served with a spicy dip. Adapted for a home kitchen from the original ClouChef R&D report — 徽州毛豆腐, report 65.

The report's fascination is with fermentation as flavour: ordinary firm tofu, kept at 25–28 °C and high humidity for three to five days, grows a white coat of mould that transforms its taste into something deeply savoury and funky, closer to cheese than to bean curd. Frying is then a matter of patience — three minutes on the first side at 180 °C, two on the second — until both faces turn the mottled tiger-skin colour that gives the dish its look. The toppings are not random: preserved egg, ham and peas add salt, richness and colour, and the dip of chilli sauce, sesame oil and garlic is heated before serving, because the report treats unheated garnishes as a safety risk. Home cooks should be candid: the ferment needs a warm, humid spot and several days, and the result smells strong. That is the point, but it is not a weeknight dish.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Fermented hairy tofu | 8.8 oz | 250 g | Firm tofu fermented 3–5 days (see steps); ready-fermented hairy tofu from a Chinese grocer is the practical substitute (adaptation). |
| Preserved egg, diced | 1.1 oz | 30 g | About half an egg, cut 0.5 cm dice, blanched 30 seconds. |
| Ham, minced | 0.7 oz | 20 g | Finely minced; any cured ham works (adaptation). |
| Peas | 0.5 oz | 15 g | Blanched 2 minutes. |
| Salt | 0.1 oz | 2 g | — |
| MSG | 0.0 oz | 1 g | Optional; omit without harm (adaptation). |
| Chilli sauce | 0.5 oz | 15 g | Heated to at least 80 °C before serving per the report. |
| Sesame oil | 1.0 tsp | 5 ml | Heated to 160 °C for drizzling, or use the hot-oil method in the steps. |
| Scallion and garlic, minced | 5 g each | 5 g each | Heated through before serving per the report. |
| Cooking oil, for frying | 1.3 tbsp | 20 ml | — |
| Dip: chilli sauce, sesame oil, garlic mince | 3:1:1 | 3:1:1 | By ratio per the report; garlic heated in hot oil first. |
Fermentation temperature is a control point: above 28 °C the tofu sours, below 25 °C the mould grows too slowly. In the pan, the first side needs its full three minutes — flipping early breaks the tofu and loses the crust. And every raw garnish in this dish is heated before serving; the report is explicit that unheated scallion, garlic and chilli sauce are a food-safety risk.
The white mould on properly fermented hairy tofu is the intended culture. Discard tofu with black, green or pink mould, or a rotten smell.
No — the report requires 25–28 °C. A fridge is too cold for the mould to grow in 3–5 days.
Deeply savoury and funky, like a strong cheese, with a crisp fried crust and a soft centre.
Best eaten fresh; fried tofu softens on standing. Fermented tofu keeps a few days refrigerated before frying. Leftovers keep 1 day refrigerated; reheat until steaming hot throughout.

Source note: ingredients, quantities and steps are adapted from the original ClouChef R&D report for 徽州毛豆腐 (data/reports/65.md). The report's pricing, margin and marketing sections are deliberately omitted here; no B2B cost is presented as a home-cook cost. The report's ingredient cost table is arithmetically wrong — it prices small quantities of preserved egg, chilli sauce and sesame oil at many times their own stated unit prices, and then claims a negative margin while calling it on-target — so all cost figures are omitted.
