Pork ribs seared golden, braised with soy and rock sugar, then finished with chestnuts until both turn melting-soft. Adapted for a home kitchen from the original ClouChef R&D report — 栗子焖排骨, report 208.

The timing of the chestnuts is the whole dish: ribs braise alone for twenty minutes, chestnuts join only for the last fifteen, because chestnuts added at the start would dissolve and ribs cooked only as long as chestnuts would stay tough. Searing the ribs first over high heat until both sides are golden builds the browned flavour that soy and rock sugar then deepen — the sugar is not there to sweeten so much as to glaze, turning the braising liquid glossy as it reduces. Reducing for three to five minutes while stirring constantly is the finish, and it needs attention: a sweet soy glaze catches fast. Served with the ribs and chestnuts heaped together and the thick sauce spooned over, it is a dish where the nuts are not a garnish but a second main ingredient, soft, sweet and inseparable from the pork. A final scatter of scallion keeps the rich glaze from feeling heavy.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Pork ribs, cut into segments | 8.8 oz | 250 g | — |
| Frozen chestnut kernels | 3.5 oz | 100 g | Thaw before using, per the report. |
| Light soy sauce | 1 tbsp | 15 ml | — |
| Dark soy sauce | 1 tsp | 5 ml | — |
| Rock sugar | 1 tbsp | 15 g | — |
| Ginger slices | 0.35 oz | 10 g | — |
| Scallion segments | 0.35 oz | 10 g | Plus extra for garnish. |
| Neutral cooking oil | 4 tsp | 20 ml | — |
| Water | 3/4 cup + 1 tbsp | 200 ml | Enough to cover half the ribs. |
Staggering is everything: twenty minutes for ribs alone, fifteen with chestnuts, because the two ingredients soften at different speeds. Adding chestnuts early gives chestnut mush; adding them late gives hard nuts in soft pork. The low liquid level is deliberate too — half-covered ribs braise in steam and sauce, and the final reduction concentrates flavour instead of diluting it.
They went in too early or the braise boiled too hard. Add at 20 minutes and keep the simmer low.
The reduction was too short, or too much water went in. Use 200 ml and reduce, stirring, until thick.
Yes — cut them into similar segments and keep the same timing (adaptation).
Keeps 3 days refrigerated; reheat gently until steaming hot throughout. Freezes up to 1 month; thaw overnight in the fridge before reheating.
