Tiny Taihu silverfish folded through a soft egg cake with spring bamboo shoots — a spring dish that is mostly about not overcooking anything. Adapted for a home kitchen from the original ClouChef R&D report — 银鱼跑蛋, report 33.

Silverfish are almost all delicacy and no structure, so the report treats them like something to protect rather than to cook hard: ten seconds in boiling water to set and deodorise them, then a gentle fold into beaten egg, then a pan that is hot enough to set the base without browning it. The egg itself is the technique. It rests untouched for fifteen seconds until the bottom sets, then it is pushed gently from the edges and flipped as one round cake, so the finished dish holds its shape and slices cleanly instead of scrambling into fragments. Spring bamboo shoots, blanched for a minute to remove any astringency, are scattered on top at the end, and the residual heat finishes them without turning them soggy. Lard is the report's fat because it carries the flavour, but the method survives perfectly well with neutral oil if lard is not in your kitchen.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Taihu silverfish, thawed if frozen | 2.8 oz | 80 g | Drain well after thawing. Small whitebait, cleaned, is the closest substitute (adaptation). |
| Eggs | 3 | About 150 g | — |
| Spring bamboo shoots, cut into fine shreds | 1.1 oz | 30 g | Canned bamboo shoots, rinsed, work (adaptation). |
| Scallion, chopped | 0.2 oz | 5 g | — |
| Salt | ¼ tsp | 2 g | — |
| MSG | Pinch | 1 g | Optional; omit if you prefer (adaptation). |
| Cooking wine | 1 tsp | 5 ml | Shaoxing wine. |
| Lard | 1.5 tbsp | 20 g | Neutral oil works (adaptation); lard gives the report's flavour. |
The difference between this dish and scrambled eggs is a single flip: fifteen seconds undisturbed, a gentle push from the edges, then one turn. Stirring breaks the silverfish and the cake alike. Keep the pan at about 150 °C — hotter scorches the egg, cooler makes it stick.
Tiny, translucent freshwater fish from Lake Taihu, eaten whole. They are soft and delicate, not crunchy like dried anchovies.
Longer blanching makes them old and tough; ten seconds sets them and removes any fishiness.
It was flipped before the base set, or pushed too hard. Wait the full fifteen seconds and use a wide spatula.
Best eaten fresh from the pan. Leftovers keep 1 day refrigerated; reheat gently until steaming hot. Do not freeze — the egg turns rubbery.

The report's pricing, margin and marketing sections are deliberately omitted here; no B2B cost is presented as a home-cook cost. Home servings (2, from one restaurant portion) and the oil and canned-shoot substitutes are adaptations and are labelled as such. Original poster image: clouchef.com (银鱼跑蛋_33.jpeg).
