Crisp bean sprouts, chives, egg and glass noodles — a light, refreshing home stir-fry. Adapted for a home kitchen from the original ClouChef R&D report — 银牙粉丝, report 183.

Silver sprout noodles are a speed dish, and their lightness comes from refusing to overcook anything. The bean sprouts lose their roots — that trimming is what earns the 'silver' name, leaving clean white stems with no straggly tails — and then they get just 30 seconds in a very hot pan with the chives, long enough to wilt slightly while staying crisp. The glass noodles are soaked for only 10 minutes in 40 °C water, because any longer and they turn soft and sticky before they even reach the pan. The egg is scrambled first and set aside, so it stays in golden pieces instead of disappearing into the noodles. And the final toss is 15 seconds flat: soy, wine and salt go in, the pan is tossed hard, and the dish leaves the heat while the sprouts are still crunchy and the noodles still distinct. It is at its best as a light lunch or a side dish next to something richer, where its clean crunch resets the palate.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Bean sprouts, roots removed | 4.2 oz | 120 g | Trim the roots for the clean 'silver sprout' look, per the report. |
| Chinese chives (garlic chives), cut into 3 cm lengths | 1 oz | 30 g | Ordinary chives or spring-onion greens are substitutes, with a milder flavour (adaptation). |
| Egg, beaten | 1 large | 50 g | About 1 egg. |
| Dried glass noodles | 2.1 oz | 60 g | Soak in 40 °C warm water for 10 minutes, no longer, then drain. |
| Salt | 1/3 tsp | 2 g | — |
| Light soy sauce | 1 tsp | 5 ml | — |
| Cooking wine | 1/2 tsp | 3 ml | Shaoxing wine. |
| Neutral cooking oil | 1 tbsp | 15 ml | About 5 ml for the egg, 10 ml for the vegetables. |
The report's timings are the recipe: vegetables at 180 °C for no more than 30 seconds, or they weep and lose their crunch; the final toss in 15 seconds, or the noodles drink the sauce and turn gluey. The noodle soak matters just as much — 10 minutes at 40 °C, not longer, or the noodles are sticky before they start. Serve hot, at 65 °C or above (from the report).
The soak ran past 10 minutes, or the final toss ran past 15 seconds. Both make glass noodles gluey — keep both timings short.
The pan was not hot enough, or the fry ran past 30 seconds. Use high heat at 180 °C and get them out while still crisp.
Bean sprouts with the roots trimmed off, leaving clean white stems. The trimming is cosmetic, but it is also what the dish is named for.
Best eaten immediately, while the sprouts are crisp. Leftovers keep 1 day refrigerated; reheat in a hot pan until steaming throughout and expect the sprouts to soften. Do not reheat more than once.
