Steamed mud crab cut into pieces and tossed in a tomato-sweet sauce, served over soft rice cakes. Adapted from the original ClouChef R&D report — 沪醉蟹, report 154. Despite the name, this report's version is steamed, not wine-marinated.

Home adaptation note: The report is one restaurant portion (one 150 g crab); quantities below are exactly that portion, so servings are 1–2 as a shared dish. Buy live crab only from a trusted fishmonger and cook it the same day.
The logic of this dish is contrast: sweet, steamed crab against a glossy tomato sauce that is cooked down until it bubbles and thickens, so it clings instead of pooling. Steaming the crab first, for eight minutes once the steamer is up to steam, sets the roe and keeps the meat from drying out in the sauce. The rice cakes are boiled separately for just two minutes, so they stay chewy and form a soft bed that soaks up the leftover sauce. A quick high-heat toss, only thirty seconds, is enough to coat the crab; any longer and the sauce dries and turns sticky. Scalding the scallion garnish in boiling water for five seconds is the report's own food-safety step, keeping a fresh garnish without serving anything raw. The result is a plate that reads as festive and generous despite using a single small crab, because the rice cakes stretch it and the glossy sauce makes every piece look lacquered.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Live mud crab (green crab), cleaned | 5.3 oz (about 1 small crab) | 150 g | Ask the fishmonger to clean it if you prefer; keep the roe. |
| Rice cake slices (nian gao) | 3.5 oz | 100 g | Fresh or frozen sliced rice cakes; frozen needs no extra soaking here. |
| Tomato ketchup / tomato paste sauce | 2 tbsp | 30 g | Report says tomato sauce; plain ketchup is the closest home equivalent (adaptation). |
| Sugar | 1 tbsp | 15 g | — |
| Shaoxing wine | 2 tsp | 10 ml | Dry sherry in a pinch. |
| Water | 2 tbsp | 30 ml | For the sauce. |
| Ginger, minced | 0.35 oz | 10 g | — |
| Scallion, chopped | 0.2 oz | 5 g | Scald 5 seconds in boiling water before garnishing, per the report. |
| Neutral cooking oil | 1 tbsp + 1 tsp | 20 ml | — |
| Salt | 1/4 tsp | 2 g | — |
| MSG (optional) | 1/4 tsp | 1 g | Omit if you prefer; the report includes it. |
Steaming sets the crab before it ever meets the sauce, so the meat stays intact and the roe stays in place. The sauce is judged by eye: when it coats a spoon it is ready. If it goes past that point it turns dry and tacky, so take it off the heat promptly.
Not in the usual wine-marinated sense. This report steams the crab and tosses it in tomato sauce; the classic wine-marinated version is a different dish on this site (Drunken Crab, report 169).
They were boiled too long. Two minutes is the report's limit; drain promptly and do not leave them sitting in hot water.
The report specifies live crab. Cooked frozen crab will be drier and the roe will not set the same way, so buy live if you can.
Best eaten at once. Leftovers keep 1 day refrigerated; reheat until steaming hot throughout and do not reheat more than once. Do not keep leftover crab at room temperature.
