Why this works

The report's name is honest: this is a stew of things thrown together, but the order is not chaotic at all. Ribs go first and alone, browned with star anise, scallion and ginger, then simmered thirty minutes on their own — because ribs need time and everything else would dissolve if it joined them from the start. Corn, potatoes and beans enter only after that half hour, and then the pot needs twenty to twenty-five minutes more, with everything submerged, so the beans in particular cook right through. That last point is a safety rule, not a preference: undercooked green beans carry toxins the report wants fully broken down by a total cooking time of at least fifty minutes. The finish is a hard three-minute reduction, stirring constantly so nothing sticks, until a third of the liquid is left and the sauce turns thick enough to coat. Ladled hot over rice or with bread, the stew is at its best the day it is made.

Equipment

Steps

  1. Blanch the ribs. Put the ribs in cold water with cooking wine, bring to a boil over high heat, then simmer over medium heat for 3 minutes, skimming. Drain.
  2. Brown the ribs. Heat a little oil, fry star anise, scallion and ginger for 30 seconds until fragrant, add the ribs and stir-fry for about 2 minutes until lightly golden on the surface.

  4. Simmer the ribs alone. Add soy sauce, salt and enough water to cover the ribs, bring to a boil, then simmer on low heat for 30 minutes.
  5. Add the vegetables. Add the corn, potatoes and green beans, stir so everything is submerged in the liquid, and simmer on low heat for 20–25 minutes more.
  6. Reduce and rest. Turn to high heat and reduce for about 3 minutes, stirring constantly to prevent sticking, until the sauce is thick and about a third of the liquid remains. Turn off the heat, rest 2 minutes, and serve. Before serving, check the thickest rib and the thickest bean reach at least 75 °C / 167 °F.

Technique: Technique: beans last, beans thorough

Green beans are the safety control point: total cooking time must reach at least fifty minutes so their natural toxins break down, and the report requires a temperature check on the thickest bean. Corn timing is the texture control: added after the ribs' thirty minutes, it keeps its bite; added earlier it turns mushy and loses its kernels' pop.

Variations

Frequently asked questions

Why must the beans cook so long?

Green beans contain compounds that break down only with thorough cooking; the report requires at least 50 minutes total and a temperature check.

Can I use boneless pork?

Yes, but ribs give the broth its body; boneless meat cooks faster, so check tenderness from 20 minutes.

What is waxy corn?

A sticky, chewy Northeastern corn variety that holds its shape through long braising, unlike sweetcorn.

Storage

Best eaten fresh, though it reheats well. Keeps 2 days refrigerated; reheat until boiling throughout and do not reheat more than once.
