Why this works

Snake is lean, firm and unforgiving, so this recipe protects it at every stage: a forty-second flash-fry at 180 °C seals the segments and sets their shape, a short aromatic fry builds the chilli base without scorching it, and then a fifteen-minute covered braise in stock finishes the cooking gently and thoroughly. That braise is also the safety step — the report requires the centre to hold at least 75 °C for ten minutes, which is what makes wild-game parasites a non-issue — so it must not be shortened even if the meat looks done sooner. Perilla goes in only in the final ten seconds of high-heat reduction: earlier and it blackens and loses its herbal lift; later and it stays raw. The result is meat that eats like firm, savoury chicken with a distinctly wild edge, coated in a sauce that is spicy, numbing and fragrant all at once.

Equipment

Steps

  1. Prepare the snake. Cut the cleaned snake meat into 4–5 cm segments, soak in cold water for 30 minutes to draw out blood, and drain well. Chop the perilla, cut the chillies into segments, crush the garlic lightly and slice the ginger.
  2. Flash-fry. Heat the oil to 180 °C (just smoking). Fry the snake segments quickly until lightly golden, about 40 seconds. Remove and drain. This seals the meat and gives the high-heat kill step; it does not cook it through.

  4. Bloom the aromatics. Leave a little oil in the pan. Fry the garlic, ginger, dried chillies and green Sichuan pepper on low heat for about 1 minute until the chillies turn brownish-red and fragrant.
  5. Braise thoroughly. Add the snake segments, turn to high heat and add the soy sauce, oyster sauce and sugar, tossing to coat. Pour in the stock, bring to a boil, then simmer on medium-low heat for 15 minutes. The snake centre must reach at least 75 °C and hold it for 10 minutes or more, per the report — do not shorten this braise.
  6. Reduce and finish with perilla. Turn to high heat and reduce until the sauce is thick and coats the segments. Add the chopped perilla, toss for 10 seconds, and turn off the heat at once. Serve hot.

Technique: perilla in the last ten seconds

Perilla is the most fragile ingredient in the dish: its aroma lives in volatile oils that vanish with prolonged heat and turn black and bitter if fried early. Adding it to a reduced, glossy sauce for a ten-second toss lets the residual heat release its fragrance without destroying it, and the sauce itself, already thick, carries the chopped leaves onto every segment instead of washing them away.

Frequently asked questions

Is snake legal and safe to buy?

It depends on where you live: buy only farmed snake from a licensed specialist supplier, check local regulations, and never use wild-caught snake. Cook exactly as directed — the long braise is the safety step.

What does snake taste like?

Firm, lean and savoury, often compared to a denser chicken with a faintly wild flavour; the sauce dominates, as with most braised game.

Why must the braise last fifteen minutes?

To hold the meat above 75 °C long enough to eliminate parasites and bacteria, per the report. Shortening it for tenderness is unsafe.

Storage and freezing

Best eaten fresh. Leftovers keep 1 day refrigerated; reheat in a covered pan with a splash of stock until steaming hot throughout. Do not freeze the finished dish.
