Steamed mitten crab, picked into roe and meat, stir-fried with soft rice cakes in a wine and soy glaze. Adapted for a home kitchen from the original ClouChef R&D report — 毛蟹炒年糕, report 200.

This dish is a lesson in using crab twice: first steamed whole so the roe sets and the meat stays sweet, then picked and stir-fried so every rice cake gets coated. The report's order is strict — steam eight minutes, pick the crab, boil the rice cakes two minutes, then stir-fry in under five — because crab roe is delicate: forty seconds on low heat is enough to make it give up its red oil, and any longer over high heat turns it bitter and grainy. A splash of yellow wine, a little soy, sugar and fifty millilitres of boiling water make a glaze that reduces in two minutes to coat everything without drowning it. Served with rice cakes on the bottom and crab on top, it is a seasonal Jiangnan dish that tastes of autumn crab season and nothing else — no chilli, no heavy spice, just crab, wine and soy.

Crab roe is the sauce base and the most fragile ingredient: low heat coaxes out its red oil, high heat breaks it and turns it bitter. That is why the roe goes in alone first, before meat and rice cakes, and why the glaze is added only after the wine has flared. Rice cakes boiled and cooled beforehand hold their shape in the final two-minute toss instead of dissolving into the sauce.
Steaming sets the roe and keeps the meat sweet; raw crab stir-fried directly would break up and lose its roe into the pan.
The heat was too high or it fried longer than about forty seconds. Keep it low and brief.
Yes, if it is fully cooked and picked; thaw completely and drain well before frying (adaptation).
Best eaten immediately; rice cakes harden as they cool. Leftovers keep 1 day refrigerated; reheat gently in a pan until steaming hot throughout. Not recommended for freezing.

The report's pricing, margin and marketing sections are deliberately omitted here; no B2B cost is presented as a home-cook cost. The report's crab cost line is inconsistent with its own unit price, so no cost figures are reproduced. The cooked-crab fallback is a home adaptation and is labelled as such.
