Pressure-cooked beef brisket with white radish in a clear sour-spicy broth of wild peppers and yellow lantern chilli sauce. Adapted for a home kitchen from the original ClouChef R&D report — 洛宁酸辣牛肉, report 206.

Luoning, in Henan, gives this beef a flavour that is sour first, spicy second, and clear rather than oily: the broth is strained after the aromatics are fried, so it arrives bright and clean instead of muddy with chilli sediment. The report's ratio is explicit — wild pepper to vinegar two to one by weight — and it is what keeps the sourness sharp without turning harsh, with yellow lantern chilli sauce adding a fruity heat underneath. Blanching matters in a specific way here: the beef is rinsed in hot water after blanching, never cold, because cold water makes the meat contract and turn tough. The final reduction, two minutes on high heat, is judged by eye: the sauce should run off a spoon in a stream, thick enough to cling but still a broth, served in a pre-warmed clay pot with scallion and sesame on top.

Three details decide this dish. Rinsing blanched beef in hot water keeps its fibres relaxed; cold water shocks them tight. Straining the broth after frying the aromatics is what makes it clear and bright instead of gritty. And the pressure time is fifteen minutes, not twenty — a minute or two over and brisket that should hold its cube shape falls apart into shreds.
To remove chilli and aromatics sediment so the finished broth is clear, which is the Luoning style — the flavour stays, the grit goes.

It was pressure-cooked longer than 15 minutes, or cut smaller than 3 cm. Keep cubes large and time strict.
Keeps 3 days refrigerated or up to 1 month frozen; reheat gently until steaming hot throughout. The broth improves after a night in the fridge.

The report's pricing, margin and marketing sections are deliberately omitted here; no B2B cost is presented as a home-cook cost. The report's ingredient weights sum to 650 g against a stated 350 g serving, so the serving size here follows the ingredient amounts (2 servings) and no cost figures are reproduced. The blanching quantities and pressure-cooker alternative are home adaptations and are labelled as such. Original poster image: clouchef.com (洛宁酸辣牛肉_206.jpeg).
