Lotus-Leaf Fish and Rice

Mandarin fish cut into tiny dice, mixed with fragrant rice, wrapped in lotus leaf and steamed for an hour — a parcel that smells of summer ponds. Adapted for a home kitchen from the original ClouChef R&D report — 荷香鱼米, report 37.

Why this works

The long steaming time is the whole point, and also the trap. Sixty minutes at a steady one hundred degrees cooks the rice through and lets the lotus leaf perfume it, but the report warns that less time leaves the rice hard in the middle, while more time turns the fish old and the leaf dull. That is why the rice is soaked for two hours in one-point-two times its volume of water first, and why the fish is cut to a precise eight-millimetre dice: larger dice do not cook evenly in the parcel, smaller dice fall apart during the long steam. The lotus leaf must be blanched for thirty seconds to soften it, or it tears when folded and its raw, green taste dominates. Garnish is treated with the same care — scallion and red pepper rings are scalded for five seconds — because a raw garnish on a long-steamed parcel would be the one uncooked thing on the plate. Open the parcel at the table for the full effect.

Equipment

Steps

  1. Dice and marinate the fish. Cut the fish into 0.8 cm × 0.8 cm dice, toss with the salt, MSG, white pepper and cooking wine, and marinate for 10 minutes.
  2. Soak the rice. Rinse the rice twice, add about 180 ml water, soak for 2 hours, then drain well.
  3. Prepare the leaf and garnish. Blanch the dried lotus leaf in boiling water for 30 seconds, cool, and trim to about 30 cm square. Scald the scallion and red pepper rings for 5 seconds and drain.

  5. Assemble the parcel. Line the bowl with the lotus leaf, edges overhanging. Mix the marinated fish dice with the drained rice, tip into the leaf-lined bowl, level it, and lay the scallion segments and ginger slices on top.
  6. Seal and steam. Fold the leaf edges inward to wrap the rice, invert a plate over the top to hold it down, and steam over medium heat for 60 minutes once the steamer is up to steam, at a steady 100 °C.
  7. Serve. Remove the bowl, discard the scallion and ginger, invert the parcel onto a plate, and scatter the scalded scallion and red pepper rings on top.

Technique: sixty minutes, no shortcuts

The report is absolute: steam for the full sixty minutes, no less, no more. Less leaves hard rice; more overcooks the fish and dulls the leaf. Keep the steamer at a steady 100 °C and do not lift the lid to check — the inverted plate keeps the parcel sealed, and opening it breaks the steam the rice depends on.

Variations

Frequently asked questions

Can I shorten the steaming time?

No — the report requires the full 60 minutes for the soaked rice to cook through inside the parcel.

Why blanch the lotus leaf?

Unblanched leaf is brittle and tears when folded, and its raw taste is too strong; 30 seconds in boiling water softens it.

Do I eat the lotus leaf?

No, it is a wrapper and a perfume, not an ingredient to eat; unwrap and discard it.

Storage and freezing

Best eaten hot from the steamer. Leftovers keep 1 day refrigerated; re-steam until steaming hot throughout. Do not freeze — the rice texture suffers.
