A whole chicken, boned with its skin intact, stuffed with shrimp, ham, mushroom, peas and glutinous rice, then steamed for forty minutes. Adapted from the original ClouChef R&D report — 八宝鸡, report 184. A project dish — allow an afternoon.

Home adaptation note: The report is one whole chicken (about 1.2 kg, 800 g after boning). Quantities below are that chicken, serving 4. Boning a whole chicken with the skin intact is an advanced skill; ask a butcher to bone it for you, or use a boned, skin-on chicken if your butcher offers one (adaptation). The glutinous rice must soak 4 hours — start in the morning.
Eight treasure chicken is less a recipe than a piece of construction, and its rules are all about keeping the construction intact. The chicken is boned from the neck, working along the bones with the skin unbroken and the opening kept under three centimetres — any tear becomes a leak once the bird is stuffed and steamed. The filling is only about seventy percent of the cavity, because glutinous rice swells as it steams and an overfilled bird bursts. The filling itself is first stir-fried to half-cooked, about three minutes, so the flavours meld without the rice turning to paste before it ever reaches the steamer. Steaming runs forty minutes at one hundred degrees, hard for the first twenty minutes and medium for the last twenty, so the rice finishes cooking through while the skin stays whole. The centre must reach at least seventy-five degrees, and the finishing glaze is deliberately thin and clear — thick enough to gloss the skin, never so thick that it hides it.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Whole chicken (San Huang or similar), about 1.2 kg | 1 chicken (about 2.6 lb) | 1 chicken (about 1.2 kg; 800 g after boning) | Ask the butcher to bone it with the skin intact if you prefer (adaptation). |
| Shrimp, frozen, diced small | 2.8 oz | 80 g | — |
| Cured ham, diced 0.5 cm | 1.8 oz | 50 g | — |
| Rehydrated shiitake mushrooms, diced 0.5 cm | 2.1 oz | 60 g | — |
| Frozen peas | 1 oz | 30 g | — |
| Glutinous rice, soaked 4 hours and drained | 3.5 oz | 100 g | Soak 4 hours; drain well. |
| Salt | 1 tsp | 5 g | — |
| Shaoxing wine | 1 tbsp + 1 tsp | 20 ml | For marinating the chicken and seasoning the filling. |
| Corn starch (for the glaze) | 1 tbsp | 15 g | Mixed with the steaming juices. |
| Neutral cooking oil | 1 tbsp | 15 ml | For stir-frying the filling; report says 'a little oil' without a quantity (adaptation). |
The filling ratio is the whole dish: seventy percent leaves room for the rice to swell. Fill it fuller and the skin splits in the steamer, and there is no repairing a split stuffed chicken.
It is hard. Ask a butcher to bone it with the skin intact, or start with the thigh version in the variations.
It was filled past 70%, or the steaming heat stayed too high for the full 40 minutes. Follow both rules.
It was not soaked long enough, or the steam was too gentle. Soak the full 4 hours and hold 100 °C steam.
Best eaten the day it is made. Leftovers keep 1 day refrigerated; reheat by steaming until the centre is steaming hot throughout. Do not freeze the stuffed bird.

Source note: ingredients, quantities and steps are adapted from the original ClouChef R&D report for 八宝鸡 (data/reports/184.md). The report's pricing, margin and marketing sections are deliberately omitted here; no B2B cost is presented as a home-cook cost. The report's own cost notes disagree with each other (38.89 yuan in the table against 45–50 yuan in the text), so no cost figure is reproduced.
