Steamed hairy crabs marinated for three days in a boiled, cooled Shaoxing wine brine. Adapted from the original ClouChef R&D report — 醉蟹, report 169. This is a cold, make-ahead dish — plan three days ahead.

Home adaptation note: The report is one portion of 4 crabs (about 500 g). Quantities below are that portion. The 72-hour marinade and the 0–4 °C cold chain are not optional adaptations — they are the report's method and safety rules, kept exactly.
This dish is almost entirely waiting. The crabs are steamed for twenty minutes, with the strings left on, until the centre reaches at least seventy-five degrees — that full cooking step is what makes a cold marinated crab safe to eat, and it is the step that separates this version from raw drunken crab. The brine is boiled for two minutes and then cooled completely before it ever touches the crabs, so no heat is left to overcook them and no microbes survive in the liquid. The crabs must be fully submerged, turned every twenty-four hours so the flavour penetrates evenly, and kept at or below four degrees throughout. Seventy-two hours is the report's minimum for the wine to penetrate; under forty-eight hours the wine flavour simply has not arrived. The result is cold, wine-perfumed crab meat that tastes nothing like hot steamed crab, which is the whole point of making it.

|---|---|---|---|
| Live hairy crabs, female, about 3.5 liang each | 4 crabs (about 1.1 lb) | 4 crabs (about 500 g) | Female crabs, per the report; male crabs give a different, leaner result. |

The safety of this dish rests on two facts: the crab is fully steamed first, and the brine is boiled then cooled before use. A raw-marinated version would be a different dish with different risks, and it is not what this report describes.
This version is not. The report steams the crabs fully before marinating, unlike some raw drunken-crab preparations.
The report says no: under 48 hours the wine flavour has not penetrated. Plan ahead.
The report gives a 5-day refrigerated shelf life at 0–4 °C. Do not keep it longer, and do not freeze it.
Keeps 5 days refrigerated at 0–4 °C, per the report. Serve cold. Do not leave at room temperature for more than the serving time, and do not reheat.
