Crispy Lamb Skewers

Not the usual bare-grilled skewer: lamb rib meat marinated in cumin and chilli, coated flour–egg–breadcrumb, and grilled to a golden, crackling shell. Adapted for a home kitchen from the original ClouChef R&D report — 羊肉串, report 137.

Why this works

The twist in this report is the coating, and it changes the whole skewer. Bare lamb over charcoal dries at the edges before the centre is done; a flour, egg and breadcrumb jacket protects the meat, traps its juices, and turns into a crisp shell that carries the cumin and chilli instead of letting them fall into the fire. The details are what make it work: meat cut 2 × 2 × 3 cm so every piece cooks at the same rate, a half-centimetre gap between pieces on the skewer so heat circulates, and a medium 180–200 °C grill with the rack 15 cm from the heat so the crumbs toast golden rather than scorching. Seasoning is split — half the cumin and chilli in the marinade, half scattered over the hot skewers at the end — so the spice hits twice, once cooked in and once fresh and fragrant.

Equipment

Steps

  1. Marinate. Cut the lamb into 2 × 2 × 3 cm pieces. Toss with the wine, salt and half the cumin and chilli powders and marinate for at least 15 minutes.
  2. Coat. Roll each piece in flour, then beaten egg, then breadcrumbs, pressing firmly so the crumbs stick. Do not reverse the order — the source warns crumbs fall off if the sequence changes.
  3. Skewer. Thread 4 pieces per skewer, leaving a 0.5 cm gap between pieces for even heat.

  5. Grill. Grill over medium heat at 180–200 °C, rack about 15 cm from the heat, for 3 minutes per side, 6 minutes total, until the coating is golden and crisp. Check the centre of a thick piece reaches at least 75 °C and holds it for 15 seconds, as the source requires. OVEN ADAPTATION: bake on a rack at 220 °C for 10–12 minutes, turning once, until golden and the same centre temperature is reached.
  6. Season and serve within 30 seconds. Scatter the remaining cumin, chilli and a little salt over the skewers the moment they leave the heat, and serve at once — waiting lets steam soften the shell.

Technique: coat in order, gap the meat, season twice

Flour gives the egg something to grip, egg gives the crumbs something to grip, and crumbs give the heat something to crisp — break the chain and the shell slides off. The gap between pieces is equally functional: meat packed tight steams in its own juices and the coating goes soggy from the inside. And the final scatter matters because cumin and chilli lose their top notes to sustained heat; fresh spice on a hot surface blooms without burning.

Variations

Frequently asked questions

Why did my coating fall off?

Usually the order was wrong, the crumbs were not pressed on firmly, or the meat was wet. Pat the marinated meat lightly before coating and press the crumbs in.

Can I make these ahead?

Coat and skewer up to a day ahead and refrigerate uncovered so the coating stays dry; grill to order. The source notes pre-made skewers keep 2 days refrigerated.

Is lamb rib essential?

It gives the juiciest result because of its fat. Leg meat works but needs watching — pull it the moment it hits temperature so it does not dry out.

Storage

Best eaten within minutes of grilling. Leftovers keep 1 day refrigerated; reheat in a hot oven until steaming hot throughout — the shell will not fully re-crisp. Do not freeze coated raw skewers for more than 2 weeks, and thaw fully in the fridge before grilling.
