Spicy Boiled Fish
Sichuan fish fillet in a tingly, chilli-topped broth — made with fillet, not a whole fish.

A whole bighead carp head, split and steamed under a thick blanket of chopped red chilli, finished with scallion and smoking-hot oil. Adapted for a home kitchen from the original ClouChef R&D report — 剁椒鱼头, report 11.

The drama of this dish is also its logic: a large fish head steamed whole stays moist in a way fillets cannot, because the bones and skin protect the flesh while the chopped chilli steams directly into it. The chilli topping must be generous — 120 g, spread into every crevice — or the flavour stays on the surface instead of penetrating. Steaming time is the tightest control point in the whole recipe: twelve minutes on full steam for a head of about 750 g of meat, with barely thirty seconds of tolerance either way, since under-steaming leaves the flesh clinging to the bone and over-steaming turns it mushy. Discarding the steaming liquid afterwards is essential, not optional: it carries the fishy compounds the steaming drew out. Only then do scallion and 180 °C oil go on, blooming the final aroma without cooking anything further. Serve it at the centre of the table, with plain rice and a light vegetable dish to balance the heat.
| Ingredient | US | Metric | Substitute / note |
|---|---|---|---|
| Bighead carp head, about 1.5 jin whole (about 750 g meat) | 26 oz | 750 g | A whole fish head; ask the fishmonger to split it and remove the gills. Carp or another large-headed freshwater fish works (adaptation). |
| Chopped chilli sauce (duojiao), homemade or store-bought | 4.2 oz | 120 g | Report's homemade ratio: chopped chilli : minced garlic : minced ginger = 10:3:1. Store-bought duojiao is the home shortcut (adaptation). |
| Ginger slices, for the plate | To taste | To taste | A layer under the fish head. |
| Salt | 1 tsp | 5 g | — |
| Cooking wine | 1 tbsp | 15 ml | Shaoxing wine. |
| Scallions, finely chopped | ⅓ cup | 10 g | — |
| Neutral cooking oil, for finishing | 2 tbsp | 30 ml | Heated to 180 °C for the final pour. |
Steaming time scales with the head, not with the clock: the report's twelve minutes is for a head of about 750 g of meat. If yours is much larger, add a minute or two and check that the flesh flakes; if smaller, check a minute early. Keep the steam strong and continuous the whole time — weak steam steams unevenly and is the usual cause of a head that is cooked on top and raw underneath.
Bighead carp (yongyu) is traditional for its fat, gelatinous flesh. Any large-headed freshwater fish from a fishmonger works; ask them to split it.
Usually the gills or black membrane were left in, or the steaming liquid was not poured off. Both steps are essential.
Yes: the report's ratio is chopped chilli, minced garlic and minced ginger at 10:3:1, mixed and left to ferment briefly, or used fresh.
Best eaten fresh from the steamer. Leftovers keep 1 day refrigerated; re-steam until steaming hot throughout. Do not freeze — the steamed head texture collapses on thawing.

The report's pricing, margin and marketing sections are deliberately omitted here; no B2B cost is presented as a home-cook cost. The report's pricing note contradicts its own margin figure, so no cost figures are reproduced.
