Chestnut Congee

Rice and millet porridge with chestnuts in two versions — sweet with red dates, or savoury with salt — finished with a second addition of chestnuts for texture. Adapted for a home kitchen from the original ClouChef R&D report — 栗子粥, report 211.

Why this works

The report's cleverest idea is also its simplest: the chestnuts go in twice. Half are added at the start and cook down into the porridge, giving it body and a nutty sweetness throughout; the other half go in near the end, so they stay in distinct pieces and give each spoonful something to bite. That two-stage addition is what separates this congee from a porridge that merely contains chestnuts. The grain mix matters too — thirty grams of rice for structure, twenty grams of millet for fragrance or glutinous rice for extra thickness — soaked twenty minutes so the porridge thickens in twenty-five minutes instead of an hour. Stirring every three minutes during the low simmer is not fussiness; it is what stops the bottom catching and keeps the texture even. Finished sweet with sugar and red-date shreds, or savoury with salt and scallion, and served at seventy-five degrees or above, it is the kind of autumn breakfast that is both comforting and, thanks to the chestnuts, genuinely filling.

Equipment

Steps

  1. Prepare. Score a cross on each chestnut, boil 5 minutes, cool quickly, peel off shell and inner skin, and cut the flesh into 0.5 cm dice. Rinse the rice and millet or glutinous rice twice and soak 20 minutes. Pit and shred the red dates for the sweet version.
  2. Start the congee. Bring 500 ml water to a boil in a pot. Add the soaked grains and half the chestnut dice.

  4. Simmer and stir. Boil on high heat 5 minutes, then turn to low heat and simmer gently 15 minutes, stirring every 3 minutes to stop the bottom catching.
  5. Add the rest. Add the remaining chestnut dice and the red-date shreds (sweet version). Simmer on low heat 5 minutes more until the congee is thick and the chestnuts are completely soft.
  6. Season and serve. Turn off the heat and stir in sugar (sweet version) or salt (savoury version) to taste. Serve in bowls, garnished with dried osmanthus (sweet) or scallion (savoury). The congee must be served at 75 °C or above, per the report, and the chestnuts must be fully cooked — they get at least 20 minutes in the pot after their initial boil.

Technique: chestnuts twice, stir every three minutes

Two additions give two textures: early chestnuts dissolve into the porridge and thicken it, late chestnuts stay in pieces. Cutting the dice to half a centimetre is what lets the late addition cook through in five minutes — larger pieces stay hard in the middle. Stirring every three minutes is the difference between a smooth congee and a scorched pot bottom, especially once the grains start releasing starch.

Variations

Frequently asked questions

Why add chestnuts in two batches?

The first batch thickens and flavours the porridge; the second keeps its shape so the congee has texture as well as body.

Can I use a rice cooker?

Yes, on the porridge setting, but add the second batch of chestnuts 10 minutes before the end (adaptation).

Why is my congee thin?

The grains were not soaked, or the simmer was too short. Soak 20 minutes and simmer the full 25.

Storage and freezing

Keeps 2 days refrigerated; reheat with a splash of water, stirring, until steaming hot throughout. Not recommended for freezing — the texture turns grainy.
