Why this works

The name is the presentation: a carp leaping the dragon gate is a Chinese symbol of success, so the fish is fried with its head raised and its scored flesh fanned open like scales. Scoring every two centimetres down to the bone is what makes this possible — it lets heat reach the thick flesh evenly and lets the glaze run into every cut, so the fish eats crisp outside and seasoned through. The frying technique matters as much as the scoring: holding the fish by the tail and ladling hot oil over it first sets the shape before the whole fish goes in, which is how the raised-head pose survives the pot. The glaze itself is a simple 2:1 sugar-to-vinegar balance with light and dark soy, cooked until it bubbles thick, and it must be poured boiling hot — cold glaze sits on the surface instead of soaking in. Done right, the fish arrives crackling, the glaze glistens in every score mark, and the table gets a centrepiece that is also dinner.

Equipment

Steps

  1. Clean and score. Scale, gut and clean the carp, removing gills. Score both sides diagonally every 2 cm, cutting down to the bone so the flesh fans open. Marinate with 30 ml yellow wine and ginger slices for 10 minutes.
  2. Set the shape. Heat oil to 180 °C. Hold the fish by the tail, ladle hot oil over the body until it sets in shape, then lower the whole fish in and fry over medium-low heat 5 to 6 minutes until golden and crisp. Lift out and drain.

  4. Make the glaze. Leave a little oil in the pan. Add the remaining 70 ml wine, 30 ml light soy, 10 ml dark soy, 40 g sugar and 20 ml vinegar. Stir over low heat until the sugar dissolves and the glaze turns thick and bubbling, about 2 minutes.
  5. Plate and pour. Arrange the fish on a plate with its head raised in the leaping pose. Pour the boiling glaze evenly over the fish and scatter scallion or coriander. Serve at once while the skin is still crisp. Fish must be opaque and flake easily, reaching 63 °C / 145 °F (home safety guidance, added as an adaptation).

Technique: score deep, pour boiling

Scoring down to the bone does two jobs: it lets a thick whole fish cook through in five minutes, and it opens channels for the glaze. The glaze must be boiling when it hits the fish — a cooled glaze coats the outside and never penetrates, so the flesh tastes plain under a sweet skin. Fry at 180 °C, no cooler (oily, soft skin) and no hotter (burnt outside, raw inside).

Variations

Frequently asked questions

Why hold the fish by the tail first?

Ladling oil over it sets the curved, leaping shape before the fish goes fully into the pot; dropped in flat, it fries flat.

Can I pan-fry instead of deep-frying?

A shallow fry in a large pan works but the scored flesh will not open as evenly; keep the oil at 180 °C and turn once (adaptation).

My glaze slid off. Why?

It was not boiling, or the fish had cooled and gone damp. Pour boiling glaze over a just-fried, hot fish.

Storage and freezing

Best eaten immediately; crisp skin softens within minutes under glaze. Leftovers keep 1 day refrigerated; reheat in a hot oven until steaming hot, though the skin will not re-crisp fully. Not recommended for freezing.
