Beggar's Chicken

A whole chicken stuffed with ham, shrimp and peas, wrapped in lotus leaves, sealed in a clay shell and baked for two hours — then cracked open at the table. Adapted for a home kitchen from the original ClouChef R&D report — 叫化鸡, report 57.

Why this works

The report's point is that the wrapping does the cooking. Sealed inside lotus leaves and a clay shell, the chicken steams in its own juices for two hours, so the meat stays moist while the ham, shrimp and peas stuffed inside it season the bird from within. The clay is not decoration: at about 1.5 cm thick it holds heat evenly and keeps the lotus leaves from drying out, and the foil cover for the first hour stops the shell scorching before it hardens. Home cooks should not expect a shortcut version to taste the same — the report's two-hour bake is the method, and the reward is the moment at the table, when the shell is tapped open and the lotus fragrance escapes. Checking the thickest part of the thigh reaches 74 °C / 165 °F is the only reliable doneness test for a bird this size. Serve it with the lotus leaves peeled back at the table, so the fragrance reaches everyone at once.

  4. Wrap in lotus leaf. Wrap the whole bird completely in 2 layers of lotus leaf and tie tightly with string.
  5. Seal in clay. Mix clay with water at roughly 3:1 into a thick paste and coat the leaf parcel evenly, about 1.5 cm thick, with no cracks.
  6. Bake. Preheat the oven to 200 °C. Bake 120 minutes: covered with foil for the first 60 minutes, uncovered for the second 60 so the shell hardens.
  7. Check and crack. Check the thickest part of the thigh reaches at least 75 °C / 167 °F (report standard; 74 °C / 165 °F is the usual home standard). Serve within 5 minutes, tapping the shell gently from the top with a mallet and peeling back the lotus leaf.

Technique: Technique: the seal is the oven

Clay thickness matters: about 1.5 cm, give or take 0.2 cm. Too thin and steam escapes; too thick and the bird undercooks. Keep the oven steady at 200 °C — swings scorch the outside while the inside stays raw. Tap lightly: a hard blow breaks the lotus leaf and the presentation with it.

Frequently asked questions

Where do I buy food-grade clay?

From pottery or cooking suppliers, sold as cooking clay. If you cannot find it, use the foil adaptation — do not use garden soil or modelling clay.

Why two hours?

A whole bird sealed in clay heats slowly; the report's 120 minutes at 200 °C is what cooks it through while keeping it moist.

Can I prepare it ahead?

Wrap and seal the bird up to a few hours ahead and refrigerate, then bake from chilled, adding a little extra time and checking the temperature.

Storage

Best eaten fresh from the shell. Leftovers keep 1–2 days refrigerated; reheat until steaming hot throughout and do not reheat more than once.

Source note: ingredients, quantities and steps are adapted from the original ClouChef R&D report for 叫化鸡 (data/reports/57.md). The report's pricing, margin and marketing sections are deliberately omitted here; no B2B cost is presented as a home-cook cost. The report's ingredient cost table is arithmetically wrong — it prices one bag of clay at hundreds of times its own stated unit price, and its total runs to thousands for a single chicken — so all cost figures are omitted.
