Wok Buying and No-Wok Cooking Guide

You do not need a wok to start cooking Chinese food at home. Here is when one helps, and what to use instead.

Do you need a wok?

Not at first. A wok is excellent for large, fast stir-fries because its curved shape lets you toss food through very hot oil. For one or two servings, a large, heavy skillet does the same job, and it works on flat electric and induction hobs where a round wok wobbles.

Seasoning, briefly

For carbon steel, wash, dry fully, heat with a thin layer of oil until it smokes lightly, wipe, and repeat once or twice. After cooking, clean with hot water, dry on heat, and wipe with a trace of oil. Do not soak a seasoned pan for hours.
